🥇 Elite (100+) — Target for Pinuka

Near-zero HMF (very fresh, minimal heat), exceptional diastase, full phenolic acid profile. Requires IRMS stable isotope authentication, pollen microscopy, and full microbiological panel. Lab cost per batch is highest. Pinuka lists these at ~$0.31/g ($77/250g jar).

🥈 Reserve (80–99) — Strong Export Grade

High diastase and phenolics, very low HMF. Full EU compliance panel plus TPC and antioxidant testing required. Suitable for premium EU health-food retailers. Pinuka retail ~$0.19/g ($48/250g). Best ROI target for this project.

🥉 Premium (60–79) — Mid-Market Export

Good pine character (conductivity ≥1.0 mS/cm), solid bioactives, low HMF. Standard EU Directive panel sufficient. Suitable for organic/natural food stores, online DTC, gift sets. Pinuka retail ~$0.11/g ($28/250g).

🏵️ Standard (40–59) — Volume Trade

Meets all EU minimums, passes basic compliance testing. Suitable for food-service, food-manufacturing ingredient, or private-label where grade is not the selling point. Pinuka retail ~$0.08/g ($19/250g). Wider supplier pool available.

Key tests to request from any Turkish supplier: Ask specifically for HMF (mg/kg), Diastase Activity (DN Schade), Moisture %, Electrical Conductivity, and Proline content. Any reputable Muğla cooperative can provide these from an accredited lab for ₺800–1 500 per batch test. Without these five numbers you cannot confirm which PHBS tier the honey genuinely falls into.

⚠️Known gaps found while generating this map

Stage 1 is an alias	There is no `page-stage1`. The wrapper around `showPage()` redirects `stage1` to `page-suppliers` and opens its Checklist tab, which rewrites the page header to read “Stage 1 · Supplier Sourcing”. Working as designed, but worth knowing: the supplier directory and Stage 1 are one page with three tabs, and the Stage 1 checklist keys (`p1–p10`, `n1–n6`) live there.
Directory pages render user text	Supplier, buyer and other directory cards build HTML by string concatenation. The supplier renderers now escape every field through `escH()`; the remaining directories still interpolate raw values and should get the same treatment.
Anthropic key fixed	Was readable by any whitelisted user and shipped to every browser. Now in Secret Manager, reachable only through the `anthropic` Cloud Function. Two things still need doing by hand: delete the `anthropicKey` field from `portal_meta/config`, and rotate the old key in the Anthropic console — it was exposed for as long as it sat in Firestore.
Scheduler secret in rules	`firestore.rules` carries a shared secret that grants write access to `portal_meta/honey_prices`. Rules files travel with the repo — treat it as rotate-on-exposure, not authentication.

🚀Deploy pipeline
